Let's be honest - with 2 toddlers at home all of the recipes we cook up around here need to be quick and easy! Our go to is this Cucumber Tomato Feta Salad - it is light, fresh, and made with just a few simple ingredients that give it a burst of bright Mediterranean flavors. Tomatoes and cucumbers are tossed in a dressing that blends olive oil and lemon juice, and topped with yummy feta! We actually started making it right after Madison was born in July 2018. It was hot, we were tired, and we really were searching for a simple salad that paired perfectly with anything we put on the grill. Also, I was nursing so I was always looking for hydrating foods!
This salad reminds me of visiting my grandparents in Westchester in the summertime. My Italian grandmother had the most incredible garden of fresh vegetables, herbs, and flowers in her backyard. When they moved here from Italy back in the late 1950's, having a garden was her biggest request and my grandfather delivered! I can just see the jumbo cucumbers now and how much fun it would have been to make this with her. Now, my girls watch me peel and dice, and request to taste test the veggies 😂 or as Ava calls it, an "appetizer". It's fun to have them in the kitchen with us, they definitely love being a part of the preparation.
Directions
This salad takes minutes to put together. Want to add a little protein? We've grilled up some shrimp or steak before and placed it on top for lunch!
Cut your tomatoes and cucumbers and place them in a bowl
Add the fresh lemon juice, olive oil, oregano, salt, and pepper.
Toss everything together.
Add the feta and give it one last toss.
